Hitting our stride

It is hard to believe we are heading into week seven next week, when it only feels like yesterday that we got the keys to our restauruant. There have been huge changes since then. Looking back at the photos we took in January, the transformation really is remarkable. We are nearly there in terms of decor but we have a few finishing pieces in the pipeline. We have taken on board some feedback from our customers and hopefully we will have the finished article soon, although there is always room for improvement!

Speaking of feedack, the response we have received from customers has been overwhelmingly postitive and we are really grateful for all the compliments and words of encouragement. It is a testament to the hard work of Dean, Tara and Sam in the kitchen and Marie, Geraldine, Dara and Barry in front of house. The advice from Marie and Geraldine, who are both very experienced in the industry, has been a great asset in our opening weeks.

Peter is busy with plans for summer tweaks to the menu, so there will be something different for you to enjoy when you return to see us next time. It is great to see summer favourites make their way on to the menu (even if it doesn't quite feel like summer has arrived yet). We are looking forward to the busy tourist season and showcasing to visitors what Waterford and Irish food is all about. We recently attended the West Waterford Festival of Food in Dungarvan and it was wonderful to feel the buzz around the town with people passionate about what the locality had to offer.
